Tis the season...


Pumpkin Chocolate Chip Bread

1 stick room temperature butter
1 cup sugar
2 eggs
1 1/2 cups whole-wheat flour
1 tsp baking soda
1 tsp salt
1 can pure pumpkin
1/2 cup sour cream
1 tsp vanilla
1 cup chocolate chips

Preheat oven to 350 degrees. Grease a loaf pan and set aside. Mix butter and sugar. Add eggs. In a medium bowl whisk together flour, baking soda and salt. Add to the butter mixture and mix. Add pumpkin, sour cream and vanilla, mix to combine. Stir in chocolate chips and pour into prepared pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes. Let cool in pan for 10 minutes, then remove from pan and cool on wire rack.

Our Morning Joe.

Green Smoothie

2 bananas
2-3 heaping handfulls spinach leaves
1 Tbsp ground flax seed meal
1-2 cups of water (depending on how you like your smoothies)
1 cup frozen strawberries
1/2 - 1 cup frozen blueberries
Blend in blender.
Enjoy.
Be happy knowing you've ingested greens and you didn't even have to taste them.
This makes enough for our entire family. Cut recipe in half for smaller serving size.

Easy Easy Stir-Fry



What you need:

1 lb. boneless skinless chicken breast
2 tbsp. olive oil
1/2 cup chopped onion
diced bell peppers
diced carrots
Kikkoman Stir-Fry sauce


Serve over whole wheat spaghetti noodles or rice.


What to do:
Melt butter and saute onions in a deep skillet. Add chicken and cook until white on outside. Add diced peppers and carrots and cook until tender and chicken is almost done. Add stir-fry sauce and simmer for 5 minutes. Serve over noodles or rice. Yum.

Alas...

A central spot to harbor all of my most favorite recipes.


Pumpkin Cookies:
1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 cup canned pumpkin
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt

Cream sugars and butter. Add pumpkin, egg and vanilla. Add remaining ingredients. Drop heaping spoonfuls onto a non-greased cookie sheet. Cook at 350* for 10 to 12 minutes.

Frosting:
Boil 3 tbsp butter and 1/2 cup brown sugar until moistly smooth. (Approx. 2 t0 3 minutes). Cool and add 1/4 cup mil and 2 cups of powdered sugar or until desired consistency, and whip with hand mixer until smooth. Spread onto cookies.
